Banana Pecan Breakfast Gadget – Porridge

This was an inspired creation using Irish moss blended with water, banana, pecans… nice little breakfast gadget. For those of you not familiar with Irish moss, it’s a see vegetable that can be used as a thickener. Flavor wise it doesn’t taste very good so you need to rinse it and then soak it for at least 2 hours prior to using it. I rinsed, soaked for 3 hours, then rinsed and stored 2 cups of Irish moss in the fridge for use through out the week. Even after all of that the Irish moss is not very appetizing. Irish moss works great as a thickener for pie fillings and for ice cream. The combo of Irish moss and blended chia make this porridge nice and fluffy. The recipe below serves 2.

1 C hot water
2 bananas
1/2 C pecans, almonds or pumpkin seeds – try a combo
1/4 C soaked Irish moss

1 TB chia seeds

1 TB maca
2 TB mesquite powder
2 tsp cinnamon

1/2 tsp vanilla

1/4 tsp salt

Irish moss needs to be rinsed and soaked in advance. You can’t just throw Irish moss in the blender without prepping it first.

Blend water and Irish moss until smooth
Add remain ingredients and blend
Top with pecans, cacao nibs, raisins, bee pollen… whatever you like.

2 Layer Vanilla Goji Parfait

Vanilla Goji Parfait

Hi Ya’ll,

I’m back from my travels and have a video to share… it’s a little late because it’s the recipe from my May submission to 80 Percent Raw. Enjoy this easy dessert recipe in which I use chia gel, coconut meat and coconut water as the base. I’m a big fan of chia seeds and they’re not only really healthy but they also work very well as a thickener in dessert recipes. I often use chia gel as a substitute for Irish moss. Have fun with the recipe and let me know what you think.

  • 1/2 C Young Thai coconut meat
  • 1 C coconut water
  • 1/4 C palm sugar
  • 1/2 C water – for soaking chia
  • 2 T chia seeds
  • .5 oz cacao butter / 2 T
  • 2 vanilla beans – scraped or 2 t of extract
  • 2 T lucuma
  • 2 T goji berries – soaked
  • 2 t cinnamon
  • pinch of salt
  1. Start by placing the chia seed in a small jar or bowl and covering them with a 1/2 Cup of water. Stir the mixture and allow to sit for at least 20 minutes.
  2. Add the coconut water, chia gel and palm sugar to the blender. Blend smooth.
  3. Add the coconut meat and a pinch of salt to the blender and blend smooth.
  4. Pour half of the mixture into a separate container.
  5. Split and scrape vanilla beans or use 2 t of extract. Add to blender along with cacao butter.
  6. Blend smooth. You can warm cacao butter in the dehydrator to help it to mix evenly.
  7. Pour cacao butter vanilla mixture into glasses.
  8. Add a layer of gojis or cacao nibs to the top.
  9. Place glasses in the freezer to set for 1 hour.
  10. Continue by adding the remaining mixture to the blender and adding the lucuma, cinnamon and soaked goji berries. Blend smooth.
  11. Layer goji lucuma mixture on top of the chilled cacao butter vanilla mixture.
  12. Chill in the refrigerator or freezer before serving.
  13. Decorate with gojis, cacao nibs or fresh berries.

I think it’s safe to say that the pie was a success. With little resistance the pie was happily consumed by the JaxRaw meetup members before it could melt in the sun. I will be posting a short video clip from the event but first I must share part 2 of 3 in the making of this yummy raw vegan pie. This filling is a modified version of some of the pie fillings that are listed in I Am Grateful, the amazing recipe book from Cafe Gratitude. I was looking for a pie filling that used Irish Moss. I did a combo of Irish moss and ground chia to thicken things up. Enjoy the latest video. As always, your feedback is appreciated.
