Keep Warm in Those Cold Months Raw Vegan Style

Chef Adam checking during his winter travels. I have escaped to the West Coast for a little sunshine and fun times. Though I’ve been living in Michigan year round for the past 4 years, I still don’t care much for the winter months. Yes, the pristine white snow and the serenity of winter have their charm but I can enjoy these scenes nestled in a hammock or with my toes in the warm sand.

winter_teaStaying raw in the wintertime can be challenging especially if you’re going to be inflexible about things. Flexibility is your key to success. Hot tea and warming foods have been my saviors during the winter. During the cold months I still start my day off with 32 ounces of water with minerals or fresh lemon. The only difference is that I warm the water first. Not in the microwave though, I use an electric kettle. This warmth first thing in the morning makes a world of difference too. Also I make a point to eat fruits at room temperature and allow refrigerated food items to warm to room temperature before consuming them.

Skin brushing first thing in the morning has a warming effect. Rebounding is a year round staple but it’s especially useful in the wintertime to get the circulation going and warm up the body. Hot teas throughout the day are great for maintaining warmth. I make a point to have a variety of loose medicinal teas like reishi, pau d’arco, oat straw, cat’s claw, holy basil, mint and sarsaparilla on hand to drop into my French press and brew a custom tea that will support my immune system.

When all else fails I have something cooked in the crock pot. My favorites are sweet potato or any of the hard winter squashes. I like things simple and so I simply wash whatever I’m crocking, put it into the pot, set it on high and check back in 2 hours. Most folks like to cut their squash in half and scoop out the seeds. That’s easy enough to do but sometimes I throw the whole thing in and deal with the seeds once it’s been cooked.

To top the squash or sweet potato I like to make an enzyme and probiotic rich sauce using miso paste, some warm water, coconut oil and some spices. I hand mix these items in a small bowl and then pour them over what ever I’ve prepared. Here’s a basic recipe:

1 TB organic miso paste

1 TB coconut oil

2 TB hot water

1/4 tsp cinnamon or ginger

Combine ingredients in a bowl and pour over squash or sweet potato.

Brazil Nut Breakfast Porridge

On those cool (or cold, depending on where you are) winter mornings it’s nice to start out the day with something warm in your belly. Before you go and boil, toast , pan fry or microwave your breakfast take a look at this tasty recipe for a breakfast cereal. I like to fill my 9-tray dehydrator with sprouted buckwheat and dry it for use throughout the month. The dry mixture of ingredients below can be prepared in bulk amounts in advance, that way all you have to do is scoop out the mix and add hot tea.

  • 6 brazil nuts – cut into chunks
  • 5 dried figs – cut off stem and dice
  • 2 T sprouted buckwheat
  • 1 T chia seeds
  • 1-2 T goji berries or raisins
  • 1 T mesquite
  • 1 T cacao nibs – optional
  • 1-2 t maca
  • 1 t carob
  • 1 t cinnamon
  • ¼ t Himalayan or sea salt
  • ½ apple – small dice or fine julienne cut or use a banana
  • ¼ C hot herbal tea

1.     Combine all the dry ingredients in a bowl.

2.     Add hot herbal tea of your choice and stir in. Allow to sit in the dehydrator or on the counter for 5-10 minutes.

3.     Cut up apple and mix in.

4.     Serve warm or chill it in the fridge.

There are 2 tricks to really getting flavor out of this recipe. The first is allowing the figs to soak with all the ingredients for a couple of hours. This works well if you are making a cold cereal. You can just put everything together in a bowl and refrigerate it overnight for a tasty breakfast treat the following morning. The second trick is using a really delicious herbal tea. Something with ginger, citrus and spice works great in the winter. In cold months you can warm your refrigerated cereal up by putting it in the dehydrator for an hour or so before eating.

Day 2 – Canada Juice Fast

As day 1 came to a close Heathy and I had each consumed a large green juice and a large glass of the celery, apple, ginger and cranberry blend. Spaced out between those 2 juices I had 4 large mugs of warm/hot tea and a glass of water. So the green juice fast is shaping up to be a hot tea fast. I guess I should share with you the tea blend of choice on the fast. At the moment we’re making a lose tea mixture of reishi mushroom, pau d’arco, cat’s claw, oat straw and chaga. Last night we added some astragalus root to the blend and were both in agreement that it was a bit overpowering.

The tea blend is chocked full of immune boosting, anti-viral, fungal, bacterial and health enhancing herbs. I was happy to read about the yeast eliminating properties of pau d’arco. I’ve been sweetening my teas with maple syrup or raw honey. Both of which are local.

The sleep schedule has had us getting to bed later than usual. Last night being New Year’s Eve, we had an excuse to stay up a bit late drinking tea. Late to bed equals late to rise. In the snowy Canadian landscape I’m cool with slipping into hibernation mode. We weren’t out of bed until 11am this morning. I made juice while sipping hot water with lemon. Both Heathy and I noticed how sore our lower backs were. We had done yoga the day before but we think the soreness had to do with multiple factors, one of them being the fast. A little yoga loosened things up.

By 4pm we were out the door and visiting Heathy’s parents house. While there we had a real treat: hot miso soup with garlic. We blended it smooth in the vita-mix. It truly hit the spot. This was followed through out the evening with mugs of hot tea and honey. We ended up staying late and missing our evening juice. We both felt ok with this though and retired for bed by 11pm.

My energy level has been pretty consistent. I am experiencing occasional hot flashes accompanied by shaky fatigue. I just go with it and eventually it passes.

Fasting in subzero temperatures is a new experience for me so I’m not going to push things. At the moment the outside air temp is -24C which is -15F. Fasting is a real heat sucker so if I feel things getting a little to intense I’m not going to hesitate in backing off. Day 3 should be very telling.

Day 1 Canada Juice Fast

After a long night of feasting on the last of our raw desserts… ice cream, whipped cream, chocolate mousse and a variety of sauces; we began our juice fast at the stroke of midnight. I don’t recommend binging on desserts or anything else prior to a fast. I’ve actually heard stories of people having a last meal of McDonald’s before starting a fast and it turns my stomach, but

everyone makes their own choices and reaps the results.

The morning began with licorice tea followed by green juice an hour or so later. We got a late start to the day only getting up after 10am and making the juice by noon. The morning juice combo that filled both of our cups consisted of:

  • 2 large cucumbers
  • 4 celery ribs
  • 2 kale leaves
  • 2 romain leaves
  • a nub of fresh ginger
  • 1 quarter of a lemon, peel and all

All of this went through the juicer. I lined the pulp container with the seed mylk bag and as you can see I was able to collect a decent amount of juice by squeezing the pulp.

The rest of the days liquids will include hot tea and more green juice. Heathy is talking about a blend of celery, ginger, lemon and apple for later today. I can’t wait.
